These easy pork and rice quesadillas are made even easier with the use of In Cuisin’s tomato & basil risotto. They are fun to make with the kids. Let them assemble their own and eat with their hands on this special night, you will be making a lifetime of memories!
Ingredients:
- 1/2 pork loin, cut into bite sized pieces
- 1 bag of In Cuisin tomato & basil risotto
- 1/2 cup of canned black beans, drained
- 1/2 cup of chopped tomatoes
- 1/2 cup grated mozzarella cheese
- A handful of chopped cilantro
- Tortilla wraps
- Chili flakes to taste
- Salt and pepper to taste
Method:
- Pre-heat your oven to 350 degrees
- Sauté the pork in some olive oil until well cooked. Season with salt, pepper and chili flakes
- Add the risotto, beans, tomatoes and cilantro and mix well. Cook for 10 minutes
- Spread the mixture on a tortilla, sprinkle some cheese and cover with another tortilla
- Place your tortilla on a baking sheet and bake for a few minutes until the cheese is melted
